Last fall we took a cruise on the Disney Dream and had the most spectacular seven-course gluten-free dining experience at Remy. It was for our anniversary so we decided to splurge.
There is not a gluten-free menu at Remy, but they will accommodate any dietary restriction, building off of the main menu. A chef will come to your table and will guide you through your options.
I wish I can remember exactly what we had but since so much time has passed, I cannot. Suffice it to say that even though this was a gluten-free dinner, it was the best dinner I have ever had, hands down! Just because we can't have gluten doesn't mean we are limited to food that tastes like cardboard.

Dined at Flying Fish the other day. While it is not on the GF menu, we ate the cheese plate for an appetizer (no toast points). We love the cheese plate! I had the Wagyu Filet cooked medium. For entrees, my wife had the salmon filet cooked through. I have to say her meal was better tasting than mine. I guess you shouldn't order steak at a fish place. We ate the "Under the Sea" (read: Chocolate Domes) for dessert. It also is not a GF choice, but all they have to do is not add the "embellishments" to make it suitable for us. It was fabulous! ... We were seated right by the railing for a perfect view of the pyramid and boat ride. Linda greeted us immediately and asked who had the food allergy. She pointed out the GF options on the menu, and said they can accommodate and alter almost anything on the menu to GF. We asked for chips, and she told us she wanted to speak with the chef first to make sure they were GF. She said that sometimes they run out of chips and when they fry more, they are cross contaminated. She added that they start fresh every morning with new oil and fry a bunch of chips first thing. She was very knowledgeable about food allergies. She brought us chips with picante sauce and a green chile sauce and told us they were GF. They were very good, especially with the green salsa. They were able to make my two year old daughter cheese quesadillas on corn tortillas. That came with a side of rice and refried beans. I ordered the chicken enchiladas. My food was good, but did have a kick to it. Not to worry, they had delicious margaritas to help with the spicy food. I recommend asking for Linda as your server. She took such good care of us. We arrived early for our 8:00pm check-in so I could confirm they had my daughter and myself marked as a gluten allergy. They immediately seated us and confirmed that the chef knew and was making us a special plate. The chef came out rather quickly with 2 plates of GF desserts. I was very impressed. After spending all of that money on the dessert party, I would have liked the option of having some of the GF desserts on the actual buffet. When spending over $200 on tickets for this event, I think an adult needs something other than gummy bears. The GF desserts were good, don't get me wrong, I just would have liked a choice. After meeting Minnie and Daisy at Pete's Silly Sideshow, we were directed to Big Top Souvenirs in Fantasyland. Really bad lightening was in the area, so they asked us all to stay inside for the time being. Since they were making caramel apples, we decided for a snack. I asked if they could make me a caramel apple with white chocolate on it, since the only ones with white chocolate on them had crushed cookies. I was told that they cannot promise that anything there is GF. They told me that they dip their snacks into the toppings, so there is a chance for cross contamination.
